This is an easy breakfast alternative that you can prepare for the busy week ahead. You could also use up left over vegetables in the fridge.

Ingredients

* 3 shortcut bacon rashers
* 1 carton of egg whites (check fridge section in the grocery store)
* 1 washed and sliced leek
* 100g chopped mushrooms
* 1 large zucchini grated
* 50g of light grated cheese 

Instructions:

Place bacon rashers on the bottom of a baking paper lined loaf tin. 
Layer leeks, mushrooms and zucchini on top of each other.
Pour egg white over the top.
Top with grated cheese and bake at 180C until golden on top.
Cut into slices once cool and store in airtight container.

Note: Due to the zucchini there may be some excess moisture when stored in fridge and/or reheated
