This is a perfect post workout option or indulgent breakfast treat. Serve warm with yoghurt and your choice of fruit, topped with a drizzle of fresh maple syrup. You could also try using flavoured protein for something different.

Ingredients

* 1 egg
* 40g protein powder (a vegetable protein or casein is best)
* 20g almond meal
* 1/2 teaspoon baking powder
* Add milk to combine

Instructions:

* Mix ingredients in a bowl until well combined
* Add enough milk so that mixture is a light batter consistency
* Cook in a non-stick pan with a small amount of coconut oil on a medium-high temperature until mixture starts to bubble
* Flip over then remove from heat
* Don’t over cook it otherwise the mixture will taste dry
